I know lots of systems have great dice pool mechanics, but what I'm mainly looking for here is an easily system that grants more than 20 possibilities and that the results have a non-linear curve to them, and keeping the math as easy as possible. Many of the suggestions are great so far, thanks for the input.

For a completely different sort of dice pool mechanic (compared to others I suggested), I'd recommend looking at Shadowrun 4 (or soon 5). No math at all. You generally roll Xd6 where X = skill + attribute + modifiers - 5s and 6s count as hits - 1s only matter if at least half the dice come up 1s (half+ 1s with no hits = critical botch; with at least one hit = botch (you potentially succeed but something unexpected happens)).

Basically like the World of Darkness, or the Old World of Darkness at least. Used only D10's and your pool was Attribute + Skill, general difficulty was 6, 1's subtract from your successes.

Otherwise the Battletech system uses 2 - 3 D6's, depending on the RPG aspect of the game. Mechwarrior, Mechwarrior 2nd Edition, and Battletech RPG: A Time of War, use D6, where Mechwarrior 3rd Edition and Classic Battletech RPG used D10's
