Thank you all so much for such a fun day and beautiful ride...and a special thanks to Sharon, Steve, and Bill for their awesome support and great coaching!
Here is the Kale Salad Recipe for those who requested it: Dressing: 1/2 cup white balsamic vinegar or champagne vinegar, 2 TBS honey (more or less depends on taste), 1/2 cup olive oil, 1/2 shallot - finely chopped, sea salt to taste. Salad: 1 bunch of Lactino Kale (cut out hard rib and chop finely, 1 apple (peeled), 1 avocado, walnuts or hazelnuts, and 1/2 cup fresh chopped mint if desired. Put dressing on Kale first and mix well until Kale begins to soften (use hands for this). Then add apple, avocado and nuts...mix again. You can also add blue cheese or goat cheese. Enjoy!

Thank You. I love salads anyway and you can't beat one with healthy ingredients that tastes this good. It will be a regular at our house.

Steve beat me to it, but I want to add my thanks too! I needed a new salad, getting tired of same ole.

Spectacular ride. You can lead me on a ride out in that country any time! Can't wait for the fall colors. Mike says he liked it too, but he said 28-30 miles is the limit for his back right now -- but that's a start, I'll take it. Can't wait to see all the pictures.

Hi Bill. We just finished STP and your ride sounds fun. Question: Will there be any place to buy some lunch? I don't think I can ride that far on just carry along snack food. Thanks!

    July 15, 2013

    • Bill

Hi Suzi, Yes to the limited services on the route. However as the ride is forming into something with some good options, I hope you'll be able to connect with Sharons suggestion and we can transport your snacks at the first stop. Scio at the 3/4 mark is next fuel stop with store and coffee shop.

There is a store in Lacomb around the 30 miles mark.

Mike doesn't want me to RSVP just yet, but he wants to see if his miles can increase enough by then that he could do the shorter route.

With your comment Sharon I will just stick to that shorter route that only passes a few of the bridges but nice country. I will revisit my covered bridge route when the leaves turn colors. Also consider a ride to Lebanon and Waterloo on the horizon. Thanks for the input.

Several members have requested I revisit my covered bridge route and add some more of the countryside further South than the previous route. A route revision would total around 85 miles and would include more availability of stops for breaks and restrooms.
I am seeking interest to the longer ride and changing this post to do that ride instead. Comments? Thanks.
