What is your history with fermentation or what are you interested in learning about?

I started out fermenting kombucha and interested in basic gut health, next thing I knew I was fermenting anything and everything I could get my hands on and went back to school for Fermentation & Gut Ecology. And started a project / company called Contraband Ferments ( where we provide fermentation education, a Fermentation CSA, blogs, and more. I love thinking out of the box and coming up with new, creative ideas. Hearing what everyone else is making and learning more about the human microbiome and the science behind fermentation are two of the things I'm most excited about. And eating! Did I mention eating?
