What is your history with fermentation or what are you interested in learning about?

Frequent kombucha, kimchi, pickle, sauerkraut, gingerbeer , cultured non-dairy milk maker - recent rejuvelac convert. Looking for interesting variations on all and exciting new things to grow in the few jars I have left.
