What is your history with fermentation or what are you interested in learning about?

Currently undertaking my first fermentation recipe--kombucha. Recently having taken a trip traveling through Japan, where I was exposure to many fermented foods, I would love to learn recipes and gain knowledge of fermented foods and beverages.
