What is your history with fermentation or what are you interested in learning about?

I am discovering the pleasures of ferments and am curious about your experiences and experiments. I've made kefir, sourdough with the kefir grains, dosas, amazake, and kimchee. mostly yummy. very exciting the bubbles.
