What is your history with fermentation or what are you interested in learning about?

I'm interested in all catagories of lacto-fermentation. I've been experimenting with dairy, vegatable and beverage for the last year thanks to Sally Fallon and Sandor Katz

Hello y'all! I'm currently enrolled in the Chef's Training program at the Natural Gourmet Institue. I grew up in Iowa and Ohio, then moved to Los Angeles. I'm very interested in fermentation and traditional food ways.
