What is your history with fermentation or what are you interested in learning about?

I enjoy making different types of kimchi and breads. I'm looking into making my first batch of yogurt soon and have made soymilk and contemplating the jump to tofu. I've also always wanted to make my great grandmother's rice wine. I just love the whole process of fermenting foods, the thin line between delicious and disaster, that this bowl of stuff can just take on a life of it's own and grow and change and gee it just tastes so good!
