Hello oyster lovers,
We spoke with Chef Renaud and he's proposed a really exciting oyster menu, which we're very happy to share with you.
Course 1 - A trio of oysters
Pipes Cove with apple and rose wine mignonette and pink pepper corn
Kumamoto with smoked salmon, horseradish and caviar, passion fruit ice foam
Mattaki with sea urchin, foie gras, plum consomme
Course 2 - Oyster milk soup
Course 3 - Oysters Rockefeller with parsley, scallion, celery branche puree, bacon creme foam, and bacon tuile (see what we mean about Chef Renaud's inventive take on familiar standards?)
Course 4 - Oyster polenta cake with roasted butternut squash, port wine, dried currant, coconut foam
