Also, there's an oyster and Japanese shochu pairing class called "The Odd Couple" coming up on Mon 6/10, taking place at SakaMai (Lower East Side). Not familiar with shochu? It's the distilled counterpart to sake and can be made from a number of raw ingredients (barley, rice, sweet potato, brown sugar and more).  These ingredients and aging techniques give each shochu distinct, complex flavors, similar to the character of a single-malt scotch. I'll be teaming up with shochu expert Stephen Lyman to discuss and taste 6 types of oysters and 6 shochus, and we'll explore how to create complementary and contrasting pairings.
