Wine & amuse-bouche pairing

Following the cheese and wine pairing evening which was good fun and a bit of an eye opening, I propose that we explore other matches between wine and food. The idea would be that 10 participants out of usual 20 come along some nibbles or amuse bouche that we will try to pair with the best possible liquid match. We wouldn't really bring already prepared dishes as they would be awkward to bring and serve, so we should focus more on canape-like aperitif food which could be savoury, sweet or even bitter. Here is a list of proposed dishes that I propose we could distribute between ourselves :

- Sushi & sahimi

- Mozarella & basilic

- Gaspacho

- White bait

- Prawns or seafood

- Caviar

- Green asparagus - Olives

- Truffles

- Fried mushrooms (morels, ..)

- Curry canapes (indian)

- Soy sauce salad (chinese)

- Foie gras & figs

- Tatin tart

- Chocolate Fondant As a participant, you would need to pick among the above choice what amuse-bouche you would bring along. For your good efforts, the participation fee will be reduced to 10£ for those who do participate in the cooking or preparing.     Hi every one and thanks for the fantastic dishes most of you brought last night, it was an amazing evening indeed. As we want a summery theme for the next one, I was thking of doing Provence which has a superb collection of flowery roses and strong powerfull red wines that will go nicely with the BBQ at Anne and Parag's. Only glitch, there are 2 world cup quarter final games planned that day. I agree that the chances to find England or France at this level of the competion are pretty slim, but still..with the international crowd that we are (Germany, Italy). So I was thinking, why not have this Provence BBQ night on the friday after 11th of July instead. Let me what you think of the idea..

    Here is the final menu for tonight (only have a light supper before): - Asparagus and goat cheese crostini
    - Anchovy wafers
    - Tapenade Provençale on natural olive oil
    - Indian paneer orange zest and cumin
    - Smoked salmon with creme fraiche and green pesto on blinis
    - Salmon nigiri - thinly sliced raw salmon
    - Tuna - thinly sliced Yellowfin tuna
    - Chorizo and feta blinis
    - Tamago - Sweet egg omelette bound by nori
    - Roasted Brie with Raisin compote
    - Oven roasted mushrooms with madeira sauce
    - Tart tatin
    - Bitter chocolate tart
    - sweet and intense with a soft unctuous mouth chocolate brownies

      Hi Carol, the location is in Bingham, but Emmanuel normally doesn’t give out people's addresses until just before, so probably tomorrow. Only half the people are bringing food & the others just come and eat & drink. Emmanuel suggested a couple of other things for people to bring the other day, something with either anchovies or foie gras, so I would pick one of those dishes or just come as you are, but let Emmanuel know if you’re going to bring a dish.

    Phil, I am interested in your offer to host it in June in Bingham so we can keep the schedule. We can still go to the River Crescent for the next ones and go through some of these suggested themes then : white burgundy, off the beaten track, etc..
    All we need to do now is finalise the menu of the amuse bouche evening, so I will contact you all individually so we finalise the pairing together. The essential thing is that dishes must be simple and pure with one strong dominating taste

    I could offer another possible place to have a summer garden wine do! I also loved tour theme suggestions. I love a good white burgundy, have recently discovered some great Loire wines but what really appeals is the off the beaten track theme. But actually I'd prefer you take us all off on a trip to find them!

    Hi all, I have just visited the business centre of the riverside building near the horse race track, where Chris has a flat. It is a great place for wine events and Chris has negociated that it would be possible for us to have our next one there. Only glitch, we cannot bring loads of food so holding an amuse bouche pairing event there is not an option. So I am proposing to keep the date however to have a usual hardcore wine only evening instead and have the food one in July in somebody's garden. Possible replacement themes (white only) : Burgundy Chardonnay, Loire valley, or wines off the mainstream paths. Let me know what you reckon ?..Alternatively, we could keep the amuse-bouche event, and find another place but I haven't received any proposal yet and we need to settle on the list of dishes urgently (my previous note) as it takes 3 weeks to source the bottles.

    Hi, just sipping some wine & was thinking that I found this list of suggested nibbles a bit daunting as they're not things I'm used to making or eating & I don't know how hard they would be to make! I've got a book called easy party food, & so far everything I've made from it is easy to make & has been tasty. I wondered about making some suggestions from there & if people liked any of them I could email them the recipes?
