I believe Ubuntu for phones isn't out till 2014.
If you can't wait till then you should flash CyanogenMod(http://www.cyanogenmod.org/
) on your phone. It's still Android but the good thing is that the phone manufacturer can't force you to upgrade to a newer phone when they stop releasing software updates for your model.
I am now running CyanogenMod 9.1.0(Android 4.0.4) on my Galaxy S and it's much better than Android 2.3 which the phone came with.
I don't think you can use it on Iphones though.

Granted, it may be a bit more tricky that flashing the Zaurus to run
debian (showing my age) or flashing routers via JTAG but patience I
have (or else I wouldnt be in the IT industry, time might be an
issue though), skill will be developed trying to flash the device,
we will never know until we try, if we weren't a curious bunch I
doubt we'd be using Linux.
