Nick,

 

            Start with the Stanford CS193 course taught by Paul Haggerty.  A lot of iOS development has spun out of the Stanford course.  Just be prepared to sit through 24 hours of class lectures via video.

 

            There's a second course on iTunes from the "Madison Area Technical College" for advanced iPhone development.  You may want to give this course a look.

 

            You should also consider picking up the Big Nerd Ranch iOS book written by Aaron Hillegass.

 

            Question for you:  Are you having trouble finding iOS people here?

You don't need to find an underground site.  iTunesU has some awesome classes from Stanford for Java (Android) and iOS and they are free.  There are also classes from Carnage Mellon, UC Santa Cruz, Cornell and many others.
