3 Events ~ Health Week : A Movie, A Cooking Class and a McDougal Potluck!

This, 3rd event in our series Health Week is based on the principles of amazing doctors and speakers like Dr Neal Barnard, T. Colin Campbell, Caldwell Esselstyn and Dr John McDougall, who wrote the book "The Starch Solution", (note the picture of starch foods?). All of these innovative body technicians are featured in our first event: "Forks Over Knives". They explain to us the whys and hows of how they came to their conclusions. Our speaker, Linda Middlesworth, who will grace us at our 2nd event this week, has been trained in their philosophy, will share with us a delicious cooking class featuring Lasagne without oil, meat, dairy or eggs.

Lets top off the week with what we will have learned and open this McDougal Recipe web-page and try our hands at the low fat, and delicious fare! If you have other sources of NO OIL, VERY LOW FAT, NO MEAT, NO EGG OR DAIRY recipes. Feel free to use those instead!

We will meet at a home in Campbell, spread it all out on a table, and in this fun and casual way, try alot of the different recipes at once! If you are not open to cooking there are plenty of no oil, vegan pre-made dishes that one can purchase, and then of course there is the awesome veg and fruit salads stand-by! But why not try our hands at what we will have learned this past week...the recipes are delicious and always make a huge quantity so no need to double recipes! Also the barbecue will be primed for those that want to share with us one of McDougall's sauces on veggies or veggie burgers!

    This sounds good as a McDougall recipe! for our pot luck May 10
    Spicy Garbanzo Spread

    This makes a delicious sandwich spread or wrap filling, a dip for raw vegetables or a stuffing for pita bread.

    Preparation Time: 10 minutes
    Chilling Time: 1 hour
    Servings: makes 1 ½ cups

    1 15 ounce can garbanzo beans, drained and rinsed
    2 green onions, chopped
    1 ½ tablespoons grated ginger
    1 tablespoon soy sauce
    1 teaspoon rice vinegar
    ½ teaspoon minced fresh garlic
    ½ teaspoon agave nectar
    Dash Sriracha hot sauce, if desired Place all ingredients (except hot sauce) in a food processor and process until smooth. Taste and add hot sauce as desired. Refrigerate at least 1 hour to allow flavors to blend.
