Hi Foodies,

It appears we're having a slow time finding takers for the pickling class. Maybe a bit more information will inspire a few of you to sign up.

But first an Wikipedia entry on pickling, which is an ancient method of preserving food with salt and acid:


For this class we are going to make the following:


Giardiniera - an Italian mix of summer vegetables, first brined and then marinated in spices and olive oil. This is an excellent condiment for meat or cheese sandwiches, a relish tray, in salads, etc. It's really delicious and you'll love it!


Preserved Lemons - a Middle Eastern ingredient that you can use for numerous dishes. It is always good to have some preserved lemons on hand, and I will give you lots of information on how to use them!


Garlic Pickles - This being a pickling class and all... we should actually pickle some small cucumbers. Mixed with garlic, these pickles are amazingly flavorful and not like anything you might have had out of a store-bought jar.


Pickled Sweet Peppers - Not only beautiful but delicious, too! You can use these pickled peppers in omelets, salads, on sandwiches and more!


Pickled Beets - Cooked beets marinated with spices turn into a delicacy that almost resembles candy: sweet and savory both, these beets can be eaten straight up, in salads or as an accompaniment to a hearty meal.


Lunch! You will be served a delicious lunch about halfway through the class. I will try to incorporate some of the goodies we are making so you can get a preview of what you'll be taking home!


And speaking of home - of course every participant takes home jars of the bounty we created. Recipes will be posted here in the Pages section.
