Spicy Cajun smoked sausage with garlic, green onions & cayenne.

Cochon de Lait - koo shon delay
Cajun BBQ pork Debris - day bree - bits of meat that are left after cooking BBQ.

Etouffee - a -2- fay
Rich butter sauce with peppers, onions and creole seasonings.

Lagniappe - lon- yop
A small unexpected gift, or something extra given as a sign of hospitality.

Macque Chou - mock shoo
Cajun corn casserole with peppers, onions, garlic and spices.
