NOTE - I am sending this to the entire group -- whether you have registered for RAW 101 or not -- because some of you have asked for additional info about the class, as you decide whether or not its something you'd like to do...

Dear Raw Food 101 Participant:
Thank you for registering for Raw Food 101: Eating Without Heating, which will be held on Saturday, January 10 from 10:00 a.m. until 4:00 p.m. at Bolton + Hay, 2701 Delaware Avenue in Des Moines. Bolton + Hay sells restaurant equipment and supplies to the wholesale trade, but is also open to the public. I buy my storage containers and a variety of other useful things there. On Saturdays they are open from 9:00 a.m. until noon. I suggest you come early for class (9:30 would give you enough time) so you can check out what they have before we get started.
If you have already paid your tuition of $99, thank you. If you have not paid, you have two options:

? Send a check (payable to Sheree Clark) to me at 3701 Beaver Avenue, Des Moines, Iowa 50310.
In either case, payment must be made to guarantee your space, and must be received by January 9. Your tuition covers class sessions, handouts and food. All you will need to bring with you is: notebook or paper for note taking, and bottled water to drink during the day. Cancelation requests will be subject to a $15 administrative fee. No refunds will be given after Wednesday, January 7. If you find you are unable to attend, you may send someone in your place.
The class will cover options for making raw (and delicious!) breakfast, lunch, dinner and snacks. In addition to demos (and tastings, of course) we will be learning about raw food ingredients that may not be familiar to you, such as tahini, miso, Nama Shoyu, agave, coconut oil and more. We?ll be going over the use of kitchen equipment including blender, spiralizer, food processor and dehydrator. We?ll talk about produce selection and storage and you?ll learn about resources for locating hard-to-find products and information. We?ll also cover how to eat in a restaurant and stay raw. I am limiting the number who can register for the class in order to allow everyone to have a ?good seat,? and so that we?ll have lots of time to get to your specific questions.
In addition to the plans I have for our time together, I am interested in hearing what you would like to have me cover. If you have questions, ideas for topics, or food ingredients you want to know more about, I hope you?ll let me know soon so I can work as much information into the curriculum as possible.
