Slovak and Czech Dinner at Koliba

True to its hunting lodge decor, at Koliba, there will be meat on your plate and fur on the walls.

The faded salmon pink facade proclaims “Czechoslovak Restaurant”, but Koliba’s hearty fare will never be out of date.


The proposed menu:

Pork Schnitzel in Potato Pancake Batter topped with Cheese

Halusky: Potato Spaetzle with Sheep Cheese and Bacon

Boiled Beef in Dill Sauce

Chicken in Natural Gravy with Mushrooms

Knedlik: Bread dumplings


The final bill, including tax and tip, for the meal will be divided equally among the diners. You will be responsible for the cost of any drinks that you order.  The estimated cost per diner is $20-28.  Cash only. Please bring small bills.

Seating is limited to one table. Please only RSVP “Yes” if you will attend. If your plans change, please update your RSVP.

    Unless the names Chara, Hossa, Bondra and Gaborik mean something to you or you’ve seen the torture porn flick “Hostel”, you may not have even heard of Slovakia. But its cuisine and that of its ex next door, the Czech Republic, left us silent as all we wanted to do was eat. Bryndzové halušky, the national dish of Slovakia, was a revelation – soft potato spaetzle with a thick white sauce made with bryndza, a sheep milk cheese with a hint of blue cheese funk, topped with cubes of smoky bacon. While halušky is a must have, knedlik is merely a must try. These dumplings are dumplings in the same way that matzah balls are, not the way that raviolis are. Reminiscent of steamed crustless Wonder Bread or Chinese mantou, knedlik is at least useful for mopping up sauces. For our greens, we had the boiled beef in dill sauce. With such amazing hearty food, it’s no wonder that the tallest man to ever lift the Stanley Cup is Slovakian.
