Hands-on Pork Butchery Workshop

Join us at our homestead in Ellenville, NY as we invite legendary master butcher Hans Sebald (of a famous Kingston meatshop & Culinary Institute fame) to teach us all about the artful practice of traditional butchery. If you want to learn this venerable craft which prizes using the entire animal and wasting nothing then by all means JOIN US! I will be cooking up some delicious food and we will have an amazing time.

Day 1: Traditional respectful slaughter, scalding, scraping & eviscerating methods, offal harvest, blood harvest

Day 2: Artful quartering & seam butchery using hand tools,
sausage making and wrapping for freezer storage

Cost: $180 for both days $100 for one day
