Butternut Squash Gratin

3 pounds of butternut squash
3 Tbls apple cider vinegar
3 Tbls olive oil
1 yellow onion, diced
1 1/2 cups grated Gruyere cheese
1/3 cup of roasted hazelnuts
2 Tbls of fresh sage, diced
Salt & pepper

Preheat oven to 400 degrees. Slice the butternut in 1/2 and then slice into thin strips and again into 2 - 3" pieces. Toss with vinegar and olive oil. Arrange on a baking sheet and generously salt and pepper. Roast the squash until it's cooked through but firm (about 15 minutes). While squash is roasting caramelize the onions with the sage. Allow to cool - then toss with the cooled/peeled squash. Oil a 9x13 baking dish and arrange a layer of squash and a layer of onion, then a layer of cheese. Add another layer of each, topping it all with the hazelnuts. Bake until the cheese is golden and melted, about 20 minutes.
