Situated between the Santa Cruz Mountains and coastline, Manresa showcases biodynamic and organic produce from Love Apple Farm, their “kitchen garden” that is literally down the road from the restaurant, as well as other ingredients representative of Northern Californian terroir (even the salt is made in-house from local seawater).
Dishes are French and Japanese influenced and inspired by nature. Chef David Kinch pays homage to others in the international circuit of haute cuisine, serving his version of L'Arpège egg and “into the vegetable garden”, inspired by Michel Bra’s gargouillou, seen in this episode of Iron Chef, where he beats Bobby Flay in battle cabbage. If you were curious, Daniel Patterson and Dominque Crenn also serve forms of gargouillou at Coi and Atelier Crenn, respectively.
