Bake Norwegian Style

My house in Eagan.

1:00-5:00pm on Sunday.

Let's make: lefse, krumkake, kransekake. I have tools for these items. You may bring tools to make other things too.

I've never done this before but think it should be a fun social experience while we learn about some of the favorite Scandinavian treats.

    I'm hoping everyone who attended had as much fun as I did hosting!! Thank you all for coming over and sharing your expertise and being willing to delve in and try new things. The goodies were AMAZING! I have a rolling pin that isn't mine so let me know who brought that. My mind isn't remembering that detail. Also, thank you Dave and Barb SO much for bring the celebratory bottle of Aquavit! It was a lovely cap for a most exciting afternoon. I'd be open to hosting an event like this again if people were interested. Let me know. Dinner next time perhaps?

    Non of the items are particularly expensive except the almonds which are about $8/# I buy them in bulk at Cub Foods. I'll run over there and get a bunch so we are sure to have them. We'll see what everyone brings to the house and go from there. I'll have backup available on everything since I'll use it through the holidays anyway. Sunday should be a blast! --Chris

    Lefse Recipe - Holmes (IA) Evangelical Lutheran Church Cookbook: Yew take yust ten big potatoes. Den yew boil dem til der done. Yew add to dis some sweet cream and by cups it measures one. Den yew steal tree ounce of butter and vit 2 fingers pinch some salt. Yew beat dis very lightly. If it ain't gud it is your fault. Den yew roll dis tin vit flour and light brown on the stove yew bake. Now call in all de gud Norwegians tew try da fine lefse you did bake!

    Okay people. I sense a little rivalry here between fresh mashers vs. instant. I suggest that Dave and Sonja both bring lefse dough and we'll roll till our arms fall off because it tastes delicious and there'll be plenty of us to work. Liz, if you'd bring a bag of sugar that'd be great. Someone is bringing flour. The rest is still up for grabs. It'll be awesome to meet you all. :-)

    I made the lefsa with instant potatoes this week. It worked so great but the recipe I used had to be chilled the night before and then the flour added when you're ready to use it. I'd be willing to mix it up. Lefsa is not usually my favorite and this was really good!

    I'm happy to bring sugar, or flour, or eggs, or slivered almonds. I'm hesitant to tackle mashing and mixing the potatoes the night before because I don't havea mixer or a pot big enough! Please send me a note about which of the above I can help out with, though.

    Using instant mash potatoes has been suggested and I'm more than happy to make lefse that way as well. If anyone would like to bring a box of instant potatoes, we'll mix some up :-) This will be fun.

    Hello everyone! I'm excited to meet you all and to enjoy cooking together. I've been pondering over what all we will want to accomplish in the few hours we'll have together. This is what I'm thinking.. I'll have "stations" set up where we'll make kransekake, krumkake, and lefse. We'll be able to taste and enjoy what we make but I'm not expecting to make enough for everyone to bring home a bunch like a bake and take. More details to come. Is there anything else anyone would like to make?

    Ditto on letting us know what to bring, $$ for supplies. I'd like to learn kransekake, especially any secrets you have for keeping it from sticking in the rings! Also don't know how to do lefse, but can turn my hand to Krumakake if folks's fingers get too burned! ;^)
