Inspired Italian - October 11

Lets have another dinner together whilst enjoying the great sunset view by the pool!

Course 1

Iced Tomato Cream

Vodka, pureed tomato, heavy cream, sour cream, salt, and pepper, lemon zest, served with sliced tomatoes and fresh basil.

Course 2

Stuffed Green Olives

Green olives stuffed with Veneto salami and Provolone cheese.

Course 3

Italian Wedding Soup

Hearty beef broth with mini beef meatballs, spinach, Italian herbs, and pasta.

Course 4

Romaine Lettuce Salad w/Gorgonzola Cheese and Walnuts

With a red wine vinaigrette

Course 5

Chicken Cacciatora

Chicken pieces with a mushroom, onion, olives, red wine and garlic marinara sauce, served over Risotto with Basil (rice with prosciutto, basil, and parmigiano-reggiano cheese).

Course 6

Ricotta Cannoli Cheesecake

Mini cheesecakes made with a cannoli crust, cream cheese and ricotta filling and decorated with an orange glaze, whipped topping, and chocolate chips

    I think that this was a great turnout and I really enjoyed the company, the food and the conversation. It was wonderful. I do hope that Ayari will decide to cook us a meal here at my home.

    I wanted to be more elaborate and use other choices for protein, but budget wise I thought it would be better to keep the cost low. I believe that chicken is a healthy alternative to bone marrow or Osso buco (veal), Abbacchio (lamb) braised trout or roasted beef shank. Beef tongue is another Italian favorite, so is beef liver, kidney and tripe. My mother used to make Chicken Cacciatora all the time. She also used to make a beef braciole (stuffed thin slices of beef, very time consuming but really good eats).
