Th menu is a unique combination of international flavours. Start with a single tiger prawn, served with confit crab and heritage beetroot. The next course, crocodile tail filet, with pickled, shaved vegetables, mango and pommel grenade, is unlike anything you've ever tasted. Next you'll move onto the mains, starting with a marinated sea bass filet, with a sublime saffron emulsion, and ginger-glazed baby vegetables. Then it's an incredibly flavourful meat dish: Slow-roast Moroccan spice lamb in red wine jus, with fondant potatoes and green bean fagot. Your dessert is absolutely decadent: Délite de chocolate and coconut, with honey-liquor-infused exotic fruits.
