Master butcher Seth Mosner breaks down the art and science behind taking finely-sourced beasts (100% Heritage pork for this event) from full sides to prime cuts and beyond. Meanwhile, the chefs behind Masarap Supper Club bring the freshly carved products straight to the kitchen where they are prepared into a one-of-a-kind feast with craft beers and cocktails served throughout.
