Old World Spice: Food & Wine Experience

Who's up for a relaxing afternoon of food and wine in the lush surrounds of Capella? Sample rare Old World and award-winning wines paired with spiced-infused Moroccan, Indian, Chinese and Singaporean cuisine.

Station 1: Moroccan 

Start off your journey by exploring the exotic spices of Morocco and Africa with Chef Meryem. Highlights include Escargots in Moroccan crispy fillo pastry, stuffed with grilled eggplants, snails ‘M’ chermel style, octopus and sausage with crush barley scented with spices, grilled vegetable and citrus broth with saffron shellfish, to name a few.

Station 2: Indian

Capella Singapore’s own Indian cuisine Chef Darhma will be spicing up the day with his own take on traditional Indian fare such as tandoori kebabs, choli roti and naan.

Station 3: Singapore 

Closer to home, learn about the spices that make Singapore’s own cuisine unique.

Station 4: Chinese 

Do you know what astragalus root is or perhaps codonopsis root? Find out how they are used in traditional Chinese cooking, together with a variety of other herbs and spices with Cassia’s Executive Chinese Chef Lee. 

Station 5: Scents & Smells 

Explore the different notes of perfumes with bespoke perfumer Nora Gasparini and even create your very own unique scent to take home!

According to the City Nomads website, some of the wines on showcase include: 
Syrocco 2010 ( fantastic red wine from Morocco), Pazo de Senorans Albarino ( complex and intriguing Spanish white wine), 4 of Languedoc's top wine appellations that are being showered with awards lately: Domaine Gauby, Leon Barral, Domaine Olivier Pithon, and Clos Marie of Pic St Loup and finally the beautiful sicilian wine of Azienda Agricola COS with mutiple press ratings and awards.
