Ever wondered about the people back in the hot kitchens who work away to bring you your perfectly seared steak or velvety soup or crispy french fries? Behind the celebrated chefs and chain restaurant names there are hard working individuals that in many cases are living off of low wages and functioning in conditions that involve discrimination, exploitation and unsanitary spaces.

Saru Jayaraman is cofounder and codirector of the Restaurant Opportunities Centers United and director of the Food Labor Research Center at University of California, Berkeley and has written the book "Behind the Kitchen Door" to bring attention to these people.
