    The scallop was perfectly cooked. It's sweet, soft flesh paired perfectly with the unctuous filling in the crunchy, yet tender purse and the slightly acidic balsamic dressing. The salmon roe produced a surprising umami when paired with the speck. When combining all elements, en toto, it was the consummate "perfect bite" (in texture and flavor). Bravo chef, bravo!
