For Chris and anyone else interested...recipe for yesterday's cookies...
From the back of the Enjoy Life Chocolate Chip bag:
Makes About 3 Dozen Cookies • Vegan & Gluten-Free!
2/3 cup Shortening (Palm or Jungle) - I used coconut oil
1 tbsp. Grapeseed or Safflower Oil
1 cup Packed Brown Sugar
1/2 cup Granulated Sugar
1 tbsp. Vanilla Extract
1/3 cup Water
2-1/4 cups Gluten-Free Baking Mix - I used Bob's Red Mill All-Purpose Gluten Free Baking Flour
1 tsp. Salt
1 tsp. Xanthan Gum
1-1/2 tsps. Baking Soda
1/2 tsp. Gluten-Free Baking Powder
1-10 oz of Bag Enjoy Life Semi-Sweet Chocolate Mini Chips
Preheat oven to 375º.
Cream shortening, oil and sugar in a mixing bowl.
Add vanilla and water. Mix until just combined.
Combine gluten-free baking mix, salt, xanthan gum, baking soda and baking powder.
Add to creamed mixture and beat until smooth.
Add in mini chips. Allow to sit for at least 10 minutes.
Drop by spoonfuls onto parchment-lined baking sheet and slightly press down on each cookie to flatten.
Bake for 8-10 minutes. Cool on baking sheet for 15-20 minutes and serve.
