Second Raw Vegan Potluck Dinner @Shine's Place

Greetings, Raw Food Enthusiasts! 


Let's kick off the Fall with another potluck at my place.

A few things to note:

1. Due to limited space, I'm opening it to 15 people -- please RSVP soon. There is NO FEE for this meetup.

2. Two weeks before the meetup date, please add a comment with your dish. This is so we don't have 10 salads and no dressings! I will be posting my dish too.

NOTE: Exactly 10 days before the meetup (on 8/27), all RSVP's without a dish will be removed. All RSVP's in the final week not accompanying a dish will be removed too, right away. Please understand that it takes time and effort to organize such an event and not showing up is simply disrespectful to everyone.

3. On the day of the meetup, please write down your recipe on a paper so other folks can recreate it. 

4. Any help with bringing disposable dinnerware -- plates / bowls / glasses / silverware will be appreciated. I will have some but may not be sufficient. 

5. Last but not the least, it's my home where this meetup will happen. Please be respectful of everyone's time and personal belongings.

Some tips:

• It's fine if some people bring only fruits. Remember, it's not a fruit-luck!

• It's not a chopped vegetable luck either -- no chopped carrots and celery please.

• Bring food in serving bowls as I may not have enough of those at home

    RAW Sprouted Chickpea Hummus
    Ingredients

    2 Cups Sprouted Raw Chickpeas (Organic)
    1-2 Tbsp. Fresh squeezed Lemon juice (Organic)
    4 Tbsp Raw Tahini
    1-2 Tbsp Cumin
    2-3 Tbsp Olive Oil
    4-8 Cloves of Garlic (Organic)
    1 Tbsp Sea Salt
    1-2 Tsp smoked Paprika
    1/4-1/2 Cups Pure Spring Water

    Directions

    - Soak Chickpeas over night in pure unchlorinated water soak 12 hours
    - Thoroughly rince and drain chickpeas twice a day for the next 2-3 days until tiny sprouts appear.
    - In Blender or Food processor, blend Chickpeas, Tahini,, Lemon Juice, Olive Oil, Garlic, Cumin, Salt and Paprika.
    - Add a little bit of water slowly to the processor until smooth thick paste.
    - Dont make Hummus too runny.
    - Garnish with Olive Oil and Paprika

    Spicy date 'tacos'

    Vary this as you wish. Below is what I used.

    Chop iceberg lettuce on half for wrappers

    Filling:
    8 Roma tomatoes
    20 dates (15 Deglets and 5 Medjools)
    4 small celery stalks
    1 handful organic greens mix (spinach, kale, collard)
    2 green onions
    a few shakes of crushed chilis
    Finely chop filling ingredients Optional extras:
    Drizzle lime juice into mixture (I forgot to add)
    Top with a little avocado (didn't want to step on Heather's dish so I didn't include avos)

      Note: the recipe called for iceberg because , although virtually flavorless, iLettuce is crunchy and that adds to the culinary experience. I will try romaine or something else next time to see how that works.

    fruit nut tort: walnuts, dates, figs, and sunflower seed. Process the first 3 ingredients, then press into a spring form pan with sunflower seeds at the bottom. Unspring and flip onto a plate. Freeze, refrigerate, serve.

    Recipe for avcado wraps: avocadoes, celery stalk, 1/2 clove garlic, some parsley, lemon juice, cumin, pepper. Wrap in leafy greens.

    I know I said I would serve green juice but I'm heading to the farmer's market right now and if I find some fresh bok choy, I might end up making bok choy soup instead. Else, I'll go back to green juice.

    Hmm, haven't thought about it but it seems to be time. I will bring a mixed green superfoods salad. Not sure of the dressing yet but probably something like blended mangos and raw nuts of some kind, perhaps with a bit of serrano pepper.

      Hey Pete, that's cool! I hear you on the not wanting to over-analyze. I'm 100% raw organic vegan, and I'm thinking that's good enough. But this Sarah Vegan Cutting gal (find her on facebook) is talking about minimizing fat intake, etc., with this 80/10/10 thing. I didn't want to deal with it. But on further reflection, I'm thinking some fine-tuning might be a good thing for me. So I've opened up to the idea. Not there yet, but I'm open to looking at it. :)
