Having worked for the last 3 years with some of the top chefs/restaurants and TV Shows in Los Angeles (Alma, Trois Mec, Melisse, Ink, Girasol, MasterChef, Top Chef, etc...) We decided to create a workshop where you can taste some of the seasonal wild ingredients we often create for them.
As usual we'll have a short wild food walk in the area and then we'll get to the fun part.
This month I will show you how to make a very tasty treat at home which features the local mountains. We'll make some gourmet rollmops with local trouts infused in local mountains vinegar, so easy to make and yet so unique in flavors!
We'll have some interesting tasting (usually 2-3) a well with other pre-made wild bites.
Dunno what Mia will come up with but it's always delicious.
Will it be local raw goat cheese with mugwort beer syrup sprinkled with lerps (insect sugar) and preserved figs (like the photo?) or maybe local rabbit pate on wild sourdough bread?
Who knows what you would get (it's always a seasonal surprise) but you don't want to miss that tasting! It's something you can't get anywhere else - pure, raw and wild Southern California flavors!
Bring water for sure, sun protection. Long pants and sleeve are advised.
