Potluck at Radha and Rick's house

We're having another potluck at Radha and Rick's house.  Our potlucks have become quite popular - most likely due to the wonderful folks and terrificly delicious food.  Sometimes, towards the middle or end of the evening, which often go as late as midnight, we'll also watch a short video or play some board games.  Most recently, Radha suggested we do a little letter-writing campaign as another option.  So, lots of choices, including doing nothing but eating and socializing.  We'll be prepared for all of the above, should the group decide upon one or the other at the event.

Please remember to only bring vegan food, and we sure do prefer organic.  A list of the ingredients are also very helpful.   Looking forward to seeing you all there.  If you'd like to mention what you are planning to bring when you RSVP, that's fine, but not necessary since it's also fun to see what the "luck" of the "pot" will be.

    Hello all! A couple of you emailed me and asked me for my recipe for my raw/vegan "cheesecake" So, instead of individual emails, I will share with all of you! :) By the way, all these measurements are approximates.

    Crust:
    1 1/2 c walnuts
    1 1/2 c pitted dates (I used deglet, but mejool would be awesome as well
    1/2 t Himalayan pink salt

    Filling:
    1 1/2 c raw cashews
    1/2-3/4 c virgin coconut oil
    1/4-1/2 c water
    1 whole vanilla bean
    Put the walnuts in a food processor, lightly chop, then add dates and salt and process until fine and "pressable". Press ingredients into pan (I used a springform cheesecake pan). Set aside.

    Put all filling ingredients in blender and process until smooth. Start with the lesser amount of water and add more if needed. Pour onto crust and top with fruit if desired. Put in refrigerator and chill until ready to serve. It really needs to set for several hours in the fridge. Enjoy!!
