Vegan Cooking Class at Miccosukee Land Co-op

One of our members, Brian Burke, has offered to host a cooking class at the Miccosukee Land Co-op community center. Brian used to be a chef at a yoga retreat in Massachusetts and has cooked just about every type of cuisine you can imagine and would like to share his knowledge with others. It will be educational, entertaining, fun and there will be plenty of yummy food for all! The cost will be about $8 - $10 per person for the cost of the food and the rental fee for the community center. Non-alcoholic drinks will be provided and you can bring your own wine/beer.

Please comment on which type of vegan cuisine you would like to learn to cook: Indian, Mexican, sushi, Thai, Chinese, "fish" n chips or suggest your own idea. The cuisine with the most votes will determine the menu!

    Delicious. Especially loved the cabbage stroganoff. I should have asked for the recipe for the tofu sauce for it. Anyone w/ recipes--and inclined to send--please pass on. Thanks

    I've decided on a menu, all vegan with gluten-free option. I didn't get too much input from folks so my compadre and I came up with something and this is it.........
    Lemon Quinoa Spinach Salad
    Roasted vegetables w/ Eggplant 'caviar'
    Tempeh, Cabbage & Mushroom Stroganoff w/ wheat or rice pasta
    Dessert plate featuring candied citrus and assorted truffles

    Looking forward to seeing you all there!! I'll have a projector set up to watch something like Forks over Knives or something along those lines (I've got a bunck of documentaries / movies) if folks want to stick around after the dinner for drinks / socializing and whatnot. feel free to bring your own adult beverages!

    I've been trying to think of things that are in season and I've got lots of cabbage in my garden now. I've been working on a vegan stroganoff recipe with tempeh, cabbage and mushrooms over noodles. There's another idea.
