Wine an Cheese are two of life’s most delightful culinary pleasures and they go perfectly together. However a very nice endeavor is to find the perfect match. As with food, chocolate and other culinary pairings with wine there are a number of factors that intervene in a Wine and Cheese pairing, such as: tannin, acidity, fat and texture.
There is an endless number of wine and cheeses in the world and so there is an endless number of possibilities in their pairing. Therefore we have decided to narrow it down and make it simple by getting the cheeses into 4 categories: Bloomy, Hard, Blue and Fresh.
Bloomy: Soft cheeses with a semi hard cover – like camembert and brie
Hard: Aged cheeses with a hard or semi hard texture – like gouda, cheddar, parmesan, pecorino, gruyere
Blue: Strong and full of blue – like danblue, gorgonzola and roquefort
Fresh: Young, soft an mild cheeses – like ricotta, feta, burrata and mozzarella
We will have a guided tasting to pair wine and cheese. It is recommended to first try the cheese and asses its texture, creaminess, acidity, fattiness and flavor. Then we will take a sip of the wine and a bite of the cheese together and discover how and why they perfectly match and the new flavors that come up wit it! We will be tasting 6 wines with their assorted cheeses.
