Do you consider yourself a newbie to this level of cooking craft restaurants?

Yes and no (there's always room for improvement).

What are your top three memorable restaurant moments that come to your mind right now?

#1 The first time I saw and tried food in a Michelin starred restaurant, I cannot stop guessing which ingredients are in the food. #2 Visit to Torre d'alta mar in Barcelona, even if food is not good for that level the view was breathtaking. #3 Paring local wine with food at La Madrac http://lemandrac.com/default.asp?lang_id=2.
