Let's Eat! Another Raw/vegan meetup :)

Hello everybody

lets get ready for another raw/vegan potluck. Please bring a raw/vegan dish, use a 3x5 card to write down the recipe and bring $1 to support this site.

Make sure to RSVP if you are coming and also RSVP additional guests.


If you are coming from US1 going North, turn on Orange Street (one block before Garden Street/corner is Burger King across from CVS) and head straight across Indian River Ave into the entry way for Harbor Pointe Condos.

If coming from I95 or US1 going South, turn on Garden street towards the Riverside. Once you cross the intersection get into the right lane and take the very first right turn (past Bait and Tackle shop) onto Indian River Ave. Turn left into the Harbor Pointe Condos entry way.

Gate House: Give the gate guy a big smile and tell him you are here to see the Yoga Lady (Beatrice). If there is no gate guy, use code *7777 to open the gates. Please park your car in front of the club house across from building #5. To enter the building, use code *7777 and use the elevator 7th floor. Unit #701

    Beatrice, Where do the recipes go? Here is a cut and paste.
    Thai Style Quinoa with Veggies

    1 cup quinoa
    1 cup steamed snow peas
    1 cup steamed broccoli
    1/2 cup coconut milk
    1/4 cup natural, chunky style peanut butter
    8-10 shakes sesame oil, or season to your taste
    1-2 T soy sauce
    1/2 T dried ground ginger, or 1 T fresh ground ginger
    1 crushed clove of garlic
    1/2 small avocado, cut up.

    Begin by cooking your quinoa in 2 cups of water. Simmer for 15 min. then set aside. Do not attempt to fluff the quinoa until it is cooled, as it can turn to mush easily when hot.

    Lightly steam snow peas and broccoli to be be crisp-tender and bright green in color.

    Sauce: combine the coconut milk, peanut butter, sesame oil, soy sauce, ginger and garlic in a small sauce pan. Over low heat, blend all ingredients, slowly stirring with a wooden spoon until all are blended.

    Mix the quinoa, veggies, and sauce in a large bowl. Add the diced avocadoes to the top.
