I am giving a lecture on the history and current practices of dry (i.e., smoking, air and machine drying), and wet (i.e., fermenting, canning) food preservation at NCSU. The talk will be approximately 45 minutes, and will cover both an overview and some details about wet and dry food preservation and pretreatment. I am primarily video taping the talk for a Distance Education section of home food production class, but I thought that as long as I was doing the talk, I would open it up to the group. I can answer questions at the end of the lecture.
