"Mini Mes".....sweet little blonde raw cookie's like me!
3- 3 1/2 cups dried coconut flakes
2-2 1/2 cups raw cashews ground into flour
3/4 cup raw local HONEY!!! thanks Gary!!!
1/4 cup coconut butter
1/4 cup coconut oil
1 T. vanilla
1/2 teaspoon salt
Combine ingredients and shape into cookies. Dehydrate for 24 hours at 110 degrees. No dehydrator? No problem! Eat cookies out of the freezer or enjoy raw cookie dough!

What's a HAPPY SHAKE???
Every morning Stacy Stowers starts her families off with a HAPPY SHAKE. She developed this
recipe and technique because she was not overly thrilled with the typical green smoothie
that tasted like lawn clippings. She wanted something more like a chocolate soft
serve ice cream.
3-4 cups fresh spinach.....GREEN is Glorious! Nothing to bitter here. Save the
kale for a nice kale salad.
1/2 cup liquid (start with less liquid and add more as needed).....water, juice,
nut milk. it's your choice. I like water or coconut water.
2. A GOOD FAT is essential for keeping you satisfied and metabolizing the spinach:
1Tbs. coconut oil...good fat won't make you fat!
or 1-2 Tbs. Hemp Seed....a complete protien!
or one raw ethically farm raised egg (my favorite)
3. The HAPPY Part:
1/2-1Tbs. Maca....for staminia, endurance, mental clarity and peak sexual
performance for both men and women
1Tbs. Raw Cacao (Raw Chocolate)...in it's Raw state chocolate is actually a
valuable potent super food loaded with nutrients and neuro-peptides very similar
to the ones our bodies create when we are in LOVE!
1Tbs. a super GREEN RAW powder....GREEN is highly alkalizing. This is crucial!

Coconut Mounds with Berry Creme Filling

This is the tasty treat we took to a potluck this weekend. I was thrilled by the many requests that followed for the recipe. My son and I invented the recipe together that morning. I knew when he was eating the dough and licking the creme as fast as I could form cookies, it was safe to bet they would turn out delightful… And they did! It is Gluten-Free, Dairy-Free, Raw, BEEgan (since it is made with bee products).
Here’s our recipe. Remember, this is kid simple and fun.
Raw Coconut Mounds Recipe
2.5 cups shredded dried coconut, all natural
1 cup raw cashews, ground into a flour consistency
1.5 cups raw almonds, ground into a flour consistency
1/2 cup local raw honey
1/3 cup Vivapura coconut creme or coconut butter
1/4 cup Cocopura – Raw, Organic, Hand-Pressed Coconut Oil
2 T vanilla extract or powdered vanilla bean
dash of mineral salt
Stir all ingredients until well mixed – no lumps and bumps. Set aside.
Berry Creme Filling
1 cup mixed berries (we used raspberries, strawberries)
2 T coconut butter
Puree in a blender. No Blender? Chop smash or mash.
Form little dough balls in the palm of your hand and poke a hole in the top with your finger. Pipe in or spoon in the berry creme filling. Close up the ball with extra dough by putting a little dough “lid” (my son named it this) loosely over the creme.
This allows it to spill out some – a little sneak peek at what’s inside. Makes a very pretty presentation.
We very lightly dusted the tops with raw cacao powder from Vivapura – Cacao Products. I love how this simple step gives it that freshly baked, brown appearance.
No Bake, Raw Dessert
Allow to set in the refrigerator and keep them there until ready to serve. If you layer them, use wax or parchment paper to prevent sticking.
Makes 4 dozen – they get eaten quickly but keep well in freezer!

Peary Good Breakfast Bar
Makes 2 dozen bars
* 2 cups raw almonds
* 1 cup raw walnuts
* 1/2 cup flax seeds, ground
* 2 tablespoons hemp seeds
* 3 medium sized pears, cored & diced
* 1 well ripened banana, peeled & diced
* 1/2 cup raisins
* 1/2 cup medjool dates, pitted and finely chopped
* 2 tablespoons apple pie spice
Coarsely grind the nuts in a food processor and transfer to a large mixing bowl.
Puree pears and bananas in food processor and transfer to a small bowl.
Mix in with a wooden spoon ground flax seeds, hemp seeds, spice, raisins and dates.
Combine both mixtures well. Spread onto a Teflex-lined dehydrator tray with a slightly wet spatula.
Dehydrate at 105F degrees for ten hours.
Flip tray over, peeling away Teflex sheet and dehydrate for another ten hours. Cut into bars or fun shapes that make you feel good!
