Humorous, yet authoritative, Colleen Poling, RD knows her vegan nutrition and shares it with enthusiasm! Great info from both Colleen and Rhonda Dunlap. Sorry if you missed this - and Colleen's Lemon Basil Cashew Cheeze - but here is the recipe:
Try this luxurious spread in lasagna, on homemade pizza or your favorite sandwich!
    Yield: ~1 cup
1 cup raw cashews, soaked in water for 10 mins
    2 garlic cloves, peeled
    1/4 cup fresh lemon juice
    1 tbsp Dijon mustard
1/4 cup vegetable broth or water (or more as needed)
1.5 cups fresh basil leaves (lightly packed)
1/2 cup nutritional yeast (gives the cheese flavor)
3/4-1 tsp kosher salt (or to taste) + freshly ground black pepper
    1/2 tsp onion powder (optional)

Drain and rinse soaked cashews. With the food processor turned on, drop in your garlic cloves and process until chopped. Add in the rest of the ingredients and process until smooth, scraping down the bowl as needed.

My timing seems to miss on every event this group has. My wife and I are making the transition from white meat and eggs pretty easily though some support and suggestions would be nice.

Hey Doug, sorry you'll miss another event...could you suggest a 'dinner out' event-time & place that would work for you and Mary - we can set up a 'meetup' for then.
