'Learn How to Eat Vegetarian' at Mesa County Public Library's 'How to Tuesday'

Whether you're considering making the the move to a vegetarian or vegan diet for the health benefits, want recipes and menu plans for the non-meat eaters in your life, or want to transition to a few meat free days a week, come join us! Our three panelists are Colleen Poling, Registered Dietitian; Rhonda Dunlap, Certified Nutritionist Consultant, and Marian Dorn; coordinator for the local Vegan Life Colorado Branch. Learn the many reasons increasing numbers of people are choosing a vegetarian or vegan diet. Learn the nutritional benefits of eating meat free, or how non-vegetarians can improve their diet by including more whole foods, fruits and vegetables. The presentation will include practical tips for preparing healthy, tasty, nutrient balanced and budget friendly meals the entire family will enjoy. Sample menu plans and recipes will be provided.     Humorous, yet authoritative, Colleen Poling, RD knows her vegan nutrition and shares it with enthusiasm! Great info from both Colleen and Rhonda Dunlap. Sorry if you missed this - and Colleen's Lemon Basil Cashew Cheeze - but here is the recipe:
    Try this luxurious spread in lasagna, on homemade pizza or your favorite sandwich!
    Yield: ~1 cup
    1 cup raw cashews, soaked in water for 10 mins
    2 garlic cloves, peeled
    1/4 cup fresh lemon juice
    1 tbsp Dijon mustard
    1/4 cup vegetable broth or water (or more as needed)
    1.5 cups fresh basil leaves (lightly packed)
    1/2 cup nutritional yeast (gives the cheese flavor)
    3/4-1 tsp kosher salt (or to taste) + freshly ground black pepper
    1/2 tsp onion powder (optional)

    Instructions
    Drain and rinse soaked cashews. With the food processor turned on, drop in your garlic cloves and process until chopped. Add in the rest of the ingredients and process until smooth, scraping down the bowl as needed.
