Vegan Potluck Lunch

Join us for a potluck lunch at Arboretum Cohousing. There's lots of room for us to eat and chat. And there's an adjacent indoor play area for the kids. Thanks to Jen for arranging this!


Cost: Free

Food: When you RSVP, please note either the specific food you will bring or a general description (main dish, salad, drinks, dessert, etc.). Even if you are not vegan, please make sure the food you bring is. That way everyone can eat everything. And please bring a card with the recipe / ingredients. It's ok to bring something simple. This isn't a competition.

Vegan Recipes: Some good sites that include vegan recipes are Andrea's Easy Vegan Cooking, VegCooking.com, Vegetarian Times, VegWeb.com, and Low Budget Vegetarian.

Utensils: Please bring along anything that's required for serving your dish (soup ladle, spatula, etc.). I will provide plates, cups, forks, knives, spoons, and napkins.

Kids: Kids are welcome to attend.

Why can't I RSVP as a maybe? Meetup.com removed the option for organizers to allow maybe RSVPs. If you would like to attend this event but cannot commit to going at this time, please RSVP yes and include a note in your RSVP that you are really a maybe.

    Here are the recipes I promised:
    Tofu Brunswick Stew
    2 ts Canola oil, divided
    1 lb Firm tofu, diced
    1/2 c Diced onion
    1/2 c Diced celery
    1 Clove garlic,minced
    1 tb Tomato paste
    1/4 c Dry red wine or beer
    1 c Canned tomato puree
    1/2 c Fresh or frozen corn kernels
    2 tb Barbecue sauce
    1 tb Tamari or soy sauce or Bragg's
    Hot pepper sauce to taste
    ______________________
    Heat 1 teaspoon oil in a non-stick pan over moderate heat. Add diced tofu; brown. Remove from pan; set aside. Add remaining 1 teaspoon oil; saute onion, celery and garlic until well-browned. Stir in remaining ingredients and reserved tofu; simmer until sauce is reduced and develops a rich brown color, about 15 minutes.

    Ginger cakes (hermits)
    1 C. sugar
    1/2 cup oil
    3 C. flour
    1 t. cinnamon
    1/2 t. nutmeg
    1/2 t. ginger
    1/2 t. salt
    1 t. baking soda
    1/2 C. OJ
    1/2 C. Molasses
    _____________________
    mix flour, cinnamon, nutmeg, ginger, salt and baking soda in a bowl. In a separate bowl
    mix sugar, oil, molasses and OJ. Mix the dry ingredients into the wet ingredients. I use a kitchenaid with the paddle attachment. Your dough will almost be like cookie dough. Line mini-cupcake tins with papers and fill trays. Bake at 350 for about 15 minutes. Do not overbake, or they will be dry. Test with a toothpick and remove from oven as soon as they come out mostly clean.

    Frosting:
    Mix earth balance, powdered sugar, and the zest and juice of one lemon. Beat with an electric mixer until creamy. Add more sugar or more earth balance to get the proper consistency. Frost cakes when they are cool, or frosting will melt.

    Just want to comment that Abby and I enjoyed our first MAV meetup group event. She is typically a shy young lady and I want to personally thank Dave for talking with her and I could see she was very comfortable with group. Abby said that no one felt like strangers,,,everyone seemed like friends. :-)

    Being allergic to gluten, I'll make sure I bring something that is both vegan and gluten free. Hopefully everybody WILL bring a recipe card / ingredient list for their contribution so those of us with allergies can be careful what we try. (Thank you!)

    I will be bringing a cruciferous slaw )cabbage, brussel sprouts, kale if I have time in the morning to visit the store) and other vegis I feel like grating and adding in. Homemade dressing. It will be gluten, dairy, and soy free, and of course vegan! My daughter is excited to come and try new things...and we may have her friend along.
