Hey Dave,

Is there a way to start a recipe exchange on the Meet Up site?


Here's a start. It's what I made for dinner:

Three diced small sweet potatoes, put in a bake dish and spray with olive oil. Bake for 20 minutes at 400.

1 diced onion, 2 diced jalapenos, 1 diced red Anaheim pepper
1 cup corn off the cob, 1 can black beans

Black pepper, cumin and chile powder to taste

Put
a bit of olive oil in wok, stir fry veggies and spices. Throw in the
potatoes from the oven. Serve with salsa in warmed corn tortillas.

I see that no one is sharing recipes here. What's up with that? There was some really great stuff at the pot luck, I think it would be great if people shared recipes for what they brought.

The chickpea salad isn't much of a recipe, but I guess I'd be a hypocrite if I didn't start with the recipe sharing love. I used this recipe from La Dolce Vegan by Sarah Kramer (cut and pasted below), but added some chopped peppers and didn't exactly do a lot of precise measuring, I'm a "to taste" kind of gal.





Ingredients:

19 ounce can chickpeas, drained and rinsed
1/4 small red onion, minced
1-2 garlic cloves, minced
1 large tomato, diced
1/4 cup fresh parsley, finely chopped
3 tablespoon oil (flax, hemp, olive, etc.)
1 tablespoon red wine vinegar
1 teaspoon lemon juice
1/4 teaspoon salt
1/4 teaspoon ground black pepper

Directions:
Toss all the ingredients in a large bowl and refrigerate for at least 1 hour before serving.

Makes 2 large or 4 small servings

Here's a stew I made today:

From the Saturday Market:
Roman flat green beans (half pound)
Okra (half pound)
three ears of corn
small yellow onion
1 large green pepper
1small red pepper
celery (half cup)
From Troy Garden:
1 fiesta squash
Roma tomatoes (half pound)
Two dried red papers (hot, small)

1. Saute whole hot peppers in 2T peanut oil.
2. Chop all veggies to the desired bite-size.
3. Carmelize onions.
4. Add all other veggies.
5. Add 3 cups of veggie broth.
6. Add these spices:
1 cinnamon stick, 1.5 t of garam masala, 1 t turmeric, 1 t ginger, 2 t cumin, 1 t fennel seeds. Simmer for an hour or maybe all day.... Eat!

I subscribe to Vegetarian Times. The latest (Feb) featured a recipe for German-Style Warm Potato Salad. I tried it last night and it was DELICIOUS! Surprisingly a bit sweet. Rather than the fresh spinach called for in the recipe, I used spring mix greens for the "bed" as a very pretty and delicate substitute. If you don't have the magazine or can't find the recipe online through their website, let me know and I'll jot it down for you....anyone!
