Are you people ready for these delicious pancakes, if not get ready because they will knock your socks off!
![]() -Gather all ingredients that are listed below and grab a medium sized bowl. ~Sift together ingredients 1-5. Create a well in the center of this dry mixture. ~Preheat skillet with a spray oil or olive oil (only about a 1 min or 2 don't forget about it!) ~While skillet is heating up, add wet ingredients 6-10 to the dry ingredients and mix until combined. Finally fold in shredded coconut (11). ~Add about 1/4 cup of batter (for each pancake) to the oiled skillet *(If you have cardamom on hand I would recommend sprinkling some on top of the moist batter while it cooks, she adds a really nice flavor.) ~ Let cook for a good 2 min or until crisp and light brown. Enjoy them warm and serve with whatever else you fancy such as fresh fruit, crisped tempeh strips, Tempeh patties, etc... 1.) 1 1/4 cups millet flour 2.) 2 teaspoons baking powder 3.) 1/2 teaspoon salt 4.) 1 teaspoon nutmeg 5.) 1/2 - 1 teaspoon cinnamon XXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXX 6.) 1 cup of NON moo milk ( rice, soy or whatever you prefer) 7.) 1/3 cup water 8.) 2 tablespoons agave nectar or pure maple syrup 9.) 1 teaspoon vanilla extract 10.) 2 tablespoons olive oil (plus some for the skillet) 11.) 1 cup unsweetened shredded coconut * Cardamom With Love, Monique |
