I travel alot for my job by car throughout the U.S. I have worked in towns with feed lots and slaughterhouses, driven behind a chicken truck transporting the animals in small tiny cages and felt disgusted. One day after watching an expose about a race horse being sold and transported to Mexico for slaughter, and seeing exactly how barbaric and inhumane this was, in addition to the suffering of the horse, I just couldn't eat meat anymore. Everytime I see a piece of meat whether in a store or restaurant, I think of animal suffering.
I would love to share recipes, volunteer and fundraise at animal rescues (I donate both to a donkey and horse rescue). It would be great to take the knowledge of this class and continue the process together as a group. Physical and mental aspects of health are something I would love to work on this year. I have an extremely stressful job and work out of state most of the spring and summer months. Camp, hike, anything outdoors are my passions. Maybe in the summer we could plan a trip to the mountains. I used to live in Glenwood Springs & Eagle, and there are some wonderful day hikes and also yurts in Eagle (Sylvan Lake) that are peaceful, quiet, and just wonderful places for weekend retreat. I also have two dogs a lab and a golden retriever mix who like to go everywhere with me.

I have not eaten meat for several years now. I am still working on a perfect balance of diet. I run out of ideas! And would love to work on the physical and mental aspect of my life.
