Top o' the morning ... this warm, hearty bread will ensure that your day gets off to a festive start.
Serving with a strong Irish coffee is optional ; ) .

Vegan Irish Soda Bread (authentic, but healthier)

Makes 1 loaf

INGREDIENTS:

1-1/4 cups soymilk or other non-dairy milk

1 Tablespoon white vinegar

2 Tablespoons applesauce

3 cups white whole wheat or spelt flour

3 teaspoon date syrup

1 teaspoon baking soda

1/2 teaspoon baking powder

1 teaspoon white miso

1/2 cup or more raisins


Directions:

1. Preheat oven to 375 degrees.

2. Combine the non-dairy milk, vinegar, and applesauce in a bowl and set aside.

3. In a large bowl, combine the flour, date syrup, baking soda, baking powder, and white miso until blended.

4. Stir in the raisins.

5. Add the soymilk mixture and mix well to make a stiff dough.

6. Shape dough into a round loaf and place on a lightly-oiled baking sheet. Pat the top down slightly, then use a sharp knife to cut an X shape on top.

7. Bake until golden brown, about 45 minutes, or until a toothpick inserted in the center comes out clean.

8. Cool on a wire rack ... then, slice & ENJOY ! ! !
