Vegan Holiday Cookie Exchange

Join us at the Hollywood Library located at 4040 NE Tillamook St., in Portland to create an inviting and decadent Vegan Holiday Cookie Platter for your Holiday Celebrations.

Bring about 4 dozen of your favorite Vegan Holiday Cookies along with the recipe and go home with approximately 4 dozen of assorted delicious, homemade cookies and recipes.

    Here is the choco chip pecan cookie recipe I promised to post! This is my go-to cookie recipe. You can cut the oatmeal down if you like, and you can also leave off the extra sea salt : Chocolate Chip Oatmeal Pecan Cookies
    1 cup vegan butter substitute (room temp)
    1 cup sugar
    1 cup brown sugar
    2/3 cup applesauce
    2 Tbsp plant based milk
    2 tsp vanilla
    2 cups whole wheat flour (or flour of choice)
    1 tsp baking soda
    1 tsp baking powder
    1 tsp + 1 TBSP sea salt
    2 ½ cups oats or rolled barley
    Chocolate chips (1 cup-1 package, to taste)
    ½ to 1 cup crushed pecans
      Preheat oven to 350.
    Cream butter and sugar in a large bowl. Beat in applesauce, then milk and vanilla.
    Stir flour, baking soda, baking powder and salt in another bowl.
    Beat flour into sugar mix until just incorporated. Stir in oats, chips, and nuts.
    Roll into 1” balls and press into reserved sea salt (or sprinkle salt on top if you want a less salty cookie)
    Place about ½” apart on cookie sheet.
    Bake 10-13 minutes.
