When I cook for myself I like simple stuff like oatmeal with blueberries, raw veggies and bean dip, steamed kale and whole grains. I also love Mexican food. It is fun to be in a town where there are so many exotic vegan dishes available in restaurants and from food carts.
I've been a vegan for over 30 years. I worked for Dr. John McDougall in the early 80's and did the editing on his first book, The McDougall Plan. My husband and I were the founders of the Vegetarian Society of Hawaii, and after we moved to the mainland, we helped found the Vegetarian Society of Utah. We owned a vegan restaurant in Utah for 5 years and created the menu and recipes for a weight loss spa in St. George UT. We moved to Nevada about 5 years ago and are now retired.
Walk, do yoga, line dance, read, watch movies, travel, and work on my website.
