Puff and Choux Pastry 2nd Class at Elements Cooking School

Following the massive success of our first puff and choux class, we've decided to host a repeat for those that missed the first class. 

We've come up with this extra special 3 hour class just for Wellington Foodies. This class will provide you with all the basics for puff pastry making. We'll cover the English method, French method, half-turn method, book fold method. The puff pastry will be used to create a savoury pie for dinner with either a chicken or vegetarian pie. While the puff pastry is resting we'll whip up a batch of chocolate éclairs for desert. You'll be making the choux and pastry cream from scratch and will get to take a box of eclairs home with you. We'll also be making pecorino and paprika puff twists and a spiced apple turnover. All recipes will be proved.

    What to do with your leftover pastry? The leftover pastry won't be as good as it was on the night because it'll be scrunched up meaning the layers won't be as flat and even any more. A friend of mine has a great way of using up leftover puff pastry that doesn't need much effort. It focusses on being delicious rather than fancy, so the pastry can be offcuts.

    Roll the pastry out into a flat sheet one or two millimetres thick and cut it into squares about the size of a slice of bread. Use rectangular strips of leftover pastry to make a double thick layer of pastry on the edge of each square, the border doesn't need to be high because it's puff pastry. Now fill the middle with pesto, or maybe cheese, or maybe even jam. Bake it in the oven until the pastry is golden.

    I've noticed that the address for this class is not the same as the address for the Mince Pies class which is also at the Elements Cooking School. Does that mean that the pastry class is in the cafe and the mince pies class is over the road? Since I've never been to a class at the Elements Cooking School before, checking beforehand seems prudent. Oh, and I've paid.

      Hi Lyoyd, they are both in the same place.... at the cooking school which is across the Road from the cafe. I'm not sure why the system is producing two different street numbers. If you stand outside the cafe facing Onepu Road there is a little alley, cross the road and head down that alley. The cooking school is in a converted garage at the end of the alley. Give me a call on my mobile if you have any problems finding it and i'll talk you in.
