Learn brining techniques with Pholia Farm owner/cheesemaker Gianaclis Caldwell.

We would love having this meeting with the goats - but they are busy at the farm, so instead we are joined again with goat owner and cheesemaker Cianaclis Caldwell from Pholia Farm, Rogue River, Oregon for an evening to explore the techniques of salting cheese. She is here for The Artisan Cheese Festival and kindly volunteered to come and help up with our cheese making!

This will include some hands on, so we suggest you bring a cheese that is fresh enough to still benefit from a dry salt or brine treatment. If you make a small wheel of feta, chevre or Queso blanco, say on Wednesday, we could still process the salt treatment with your wheel. Or if you have a brined cheese to bring for some positive feedback - please bring it along.

The club will provide some crackers and bread and fruit, wine and beer, so come along with your own favorite beverage and cheese and join the fun. We will limit this meeting to members only, so if you haven't gotten your dues in for 2013, please mail a check to Wheyward Bound in care of The Beverage People at 1845 Piner Rd, Suite D, Santa Rosa, CA 95403. Dues are $20.00 per household of 1 to 2 people.

    Really enjoyed the meeting! The technical information in the book is invaluable and is balanced by the suggestions from Gianaclis to allow for a wide variation in results, due to environmental issues such as humidity and temperature/season. Giancalis has a charming, humorous and approachable personality, not intimidating at all. I liked the soft cheese the best among her selections from Pholia Farm and enjoyed the wines, cheeses, gougeres and breads brought in by members. Big turn out, filled the room!

    The meeting was great, lots of good information as I expected!
    I brought two bitter washed curd cheeses I had made and Gianaclis took the time to taste and analyze them and gave me good feedback on what might have caused the problem.
