Hi, I am a beginner cheese maker! At the recipe reading, book collecting stage, only have made two cheeses so far! So far I have made Valencay, Bob's Manchego (came out great); Cabecou; Ale Washed Trappist Cheese; Cambezola and Saint-Marcellin.
