Sryniki-- the original recipe is from the Time-Life
Russian cookbook.

4 Cups 'Pot' or farmers cheese.
I make fromage blanc for this.
If the cheese is too dense
press it through a mesh sieve or food mill.

Beat and add 4 egg yolks or 3 whole eggs

Work in the dry ingredients:
2/3 Cup flour, more if using whole eggs
1/4 teaspoon salt
2 Tablespoons to 1/4 Cup sugar (I use 1/4 C)
I add cinnamon and whatever other spice you like

Form into rolls about 1.5 - 2 inches thick.
Wrap in wax paper
Chill, overnight is best.
I have skipped this part, but it's harder to form
the patties, because dough is sticky.

Cut 1/2 inch disks, or scoop a large spoonful
and form a patty (about 2 inch x 3/8 inch).

Fry is butter, recipe calls for 8 Tablespoons,
but I use less. Needs to be hot but not smoking.
I use a caste iron pan for even heating.

Let a nicely browned skin form on the bottom
before flipping to do the other side.

Serve with sour cream and fruit jam.
My husband like to use maple syrup.
